Senior Sommelier — HIDE ABOVE — Hedonism Wines with Michelin* Chef Ollie Dabbous

We are looking for an exceptionally talented, customer focused sommelier to join the wine team in our 80 cover fine dining restaurant Above at Hide Mayfair.

Your primary role will be to oversee a section within the restaurant supervising Junior Sommeliers, pairing wines by the glass or bottle with our Michelin* lunch & dinner tasting menu.

You will be working with 800 wines curated for the Hide winelist plus full access to the near 6,500 wines in many different formats available from our sister venture the multi-award winning Hedonism Wines, a few minutes away.

This is a great opportunity to work with some of the World’s leading wine producers serving fine wines to match the delicious cuisine created by Ollie Dabbous & his team.

You should be comfortable working with First Growth Bordeaux, Grand Cru Burgundy & Super Tuscans as well as possessing a strong knowledge of Grower Champagne.

The role would suit a mature, commercially minded sommelier eager to expand their exposure to top end fine wine within a business that rewards application & results.

The Sommelier team is filled with similarly motivated people with a real passion & enthusiasm for providing the very best service whilst showcasing the impressive Hide/Hedonism wine portfolio.

We would expect a minimum of two years fine dining experience within Michelin * or a similar standard fine dining restaurant.

Right to work in the EU is essential, visa sponsorship is not available.

Good spoken English is required & additional languages such as Mandarin and Russian are an advantage.

Excellent financial package offered with all sommeliers benefiting from joining a structured commission scheme, estimated earnings £30,000 - £50,000+ pa.
